You can assign a newly created activity or case a status of either New or Open. The status you choose should depend on whether work will start on it immediately or not.
Activities and cases that are in a New status are highlighted light tan when reviewing your main Field Services dashboard and can be opened directly from the dashboard anytime using the Open button on the right side of the card:
Additionally, if you have opened a new case or activity to view the details, it can also be opened from the status button in the top right corner:
